OH MY CHILI!
Before I share this recipe with you, I have to confess: This is not my recipe.
A few weeks back, we visited my dear friend Deni and she made chili for lunch. It was so delicious, I had two plates of it and asked her for the recipe. This is my attempt to make it. While it was not exactly the same, it was still so yummy and very satisfying.
Deni's recipe calls for 1 can (14 1/2 oz) diced tomatoes; however, I didn't have any on hand. Instead, I used 2 cans (8 oz) of tomato sauce. I didn't have bell peppers either. I used a couple jalapeños instead. It wasn't super spicy, but it had a bit of kick. Whatever you have will work great! Don't let that stop you. Oh! Also... This chili recipe is super inexpensive to make and makes a large pot - it will last you a few days. Your bank account will thank you for it.
I also used McCormick's Chili Seasoning Mix. If you have a chili seasoning recipe that has been passed down through generations in your family, absolutely use that! INGREDIENTS
1 lb. lean ground beef or ground turkey
1 pckg. McCormick Chili Seasoning Mix
2 cans (8 oz.) tomato sauce
1 can (16 oz) kidney beans, drained & rinsed
1 can (16 oz) cannellini beans, drained & rinsed
1 small white onion, chopped
2 garlic cloves, minced
1 bell pepper or 2 jalapeños or 2 serranos (or nothing, if you prefer)
2 cups beef stock
OPTIONAL TOPPINGS
Shredded cheese
Chopped onions or scallions
Sour cream
Creamy guacamole
Chopped cilantro
Tostitos chips
PREPARATION
BROWN ground beef in the pot on medium-high heat.
ADD onion and garlic. Do not let it burn! Once you smell them, go to next step.
STIR in tomato sauce, beans, jalapeños, and chili seasoning mix.
POUR beef stock in the pot.
BOIL for about 10 min. Cover. Reduce heat to medium-low.
SIMMER for about 30 min, stirring occasionally. Lower heat a bit, if needed.
SERVE and add whatever toppings you like!
